Chicken and Rice with Vegetables


This is a complete meal made in one pot. 

  • Ingredients:

    • 1 ½ cups uncooked rice (can mix with whole grain varieties)

    • 2 chicken thighs (bone-in or boneless), or a large chicken breast

    • 2 cups chopped vegetables (e.g., broccoli, carrots, zucchini, bell peppers)

    • Salt, pepper, and desired herbs or spices (e.g., rosemary, ginger, garlic)

    • Water or broth (vegetable or chicken)

  • Instructions:

    1. Season the chicken thighs with salt, pepper, and spices/herbs of your choice, set aside for 30 minutes.

    2. Rinse the rice until the water runs clear and drain well.

    3. Add the rice and the appropriate amount of water or broth to your rice cooker's inner pot.

    4. Place the chicken thighs on top of the rice.

    5. Prepare the vegetables by rinsing and cutting them into bite-sized pieces.

    6. Start the rice cooker. When the rice has almost finished cooking and absorbed most of the water, add the vegetables on top of the rice and chicken.

    7. Close the lid and continue cooking until the cycle is complete.

    8. Fluff the rice and chicken mixture with a fork before serving.
